
EG Nog
Turn this classic Christmas treat into something special, with a dash of Edinburgh Christmas Gin.
Ingredients
Serves 8
- 700ml whole milk
- 250ml double cream
- 175ml Christmas Edinburgh Gin
- 2 cinnamon sticks
- 1 tsp vanilla essence or 1 pod, split
- 1 teaspoon freshly grated nutmeg, plus more for garnish
- 4 cloves
- 4 egg yolks
- 100g caster sugar
Method
- In a saucepan, combine milk, cream, cinnamon, vanilla, cloves and nutmeg, then bring to the boil over a medium heat.
- When the liquid starts to boil, remove from the heat and allow it to sit for at least an hour to let the flavours infuse.
- In a large bowl or stand mixer, beat together the egg yolks and sugar until light and fluffy.
- Remove the whole spices from the milk mixture, then slowly whisk the milk in with the egg and sugar, mixing continually until smooth.
- Add the Christmas Edinburgh Gin and whisk well.
- Refrigerate overnight.
- Serve in mugs with a grating of fresh nutmeg or cinnamon.
