Rhubarb Rhubarb

A sophisticated number, with layers of sweetness balanced out by bright citrus and a subtly bitter note from Aperol.

Ingredients

  • 50ml Edinburgh Gin's Rhubarb & Ginger Liqueur
  • 10ml Aperol
  • 25ml fresh lemon juice
  • 12ml sugar syrup
  • 2 dashes rhubarb bitters
  • 1 egg white

Method

  1. Dry shake all the ingredients in a cocktail shaker.
  2. Add ice to the shaker and shake again for 15 seconds.
  3. Strain into a Martini or coupe glass.
