Introducing Edinburgh Seaside Gin

A new season is almost upon us – what better excuse for another limited edition libation to join the Edinburgh Gin portfolio!

Co-founder of Edinburgh Gin, Alex Nicol, was determined that our next special release should showcase some great Scottish ingredients. With the prime-gin-imbibing season of summer on its way, and Edinburgh’s local shoreline bursting with unusual botanicals just waiting to be foraged, the idea for Seaside Gin was born…

Handcrafted by our head distiller David Wilkinson in collaboration with four specially selected postgraduate students from Heriot-Watt’s MSc in Brewing and Distilling, our newest tipple has the unique flavour of summer at the beach.

Edinburgh Seaside Gin with Sandcastle

David and the team explored the Scottish coastline in search of the perfect indigenous ingredients for a distinctively Scottish seaside flavour. After extensive experimentation, they settled on a combination of seaweed, scurvy grass and ground ivy to lend the gin a slightly sweet yet refreshingly minerally taste – perfect for mixing into G&Ts on long, hot afternoons or creating summer Seaside Martinis.

Currently, only 1000 70CL bottles of Edinburgh Seaside Gin have been produced below stairs at our Edinburgh Gin Distillery, where we’ll be selling them exclusively at our gift shop priced at £35.
